I like to shake the seeds from plants onto a piece of white paper towel and leave them to dry really well. (Drying thoroughly is very important.) Then either place the seeds in a closed paper bag and store them in a cool place, or put them in a sealed plastic bag in the refrigerator. Seeds can be difficult to identify without those pretty pictures on the packet, so be sure to label the bags so next year you know what you've got..
